Remove the stalk and kernels of the pepper and cut it into strips. Let the corn drip off. Wash the baby spinach (if necessary) under cold water.
Let the baby spinach wilt briefly in a pan with 1 tablespoon of oil, season with salt and pepper, put it in a bowl and place it aside.
Put the remaining oil in the pan and fry the pepper strips briefly. Add the minced meat and the corn, season with the taco seasoning (the quantity of the seasoning depends on the desired spiciness). Cook the minced meat well.
Heat the wraps briefly in the microwave for 2-3 seconds, then spread the spinach on top, then add the minced meat mixture to it and finally roll it up. Fix it with 1-2 wooden toothpicks. Lay them on a grill or fry them in a grill pan with some extra oil until they show nice grill stripes and they are crispy. Serve with a crispy salad.
